Hummingbird cake


I finally tried this recipe after few months delaying it. hihi. The recipe is almost like my carrot cake but instead of using carrots, they replaced it with bananas. I do like it and I guess my father in law will love it too. Why I say that? because he will ask me to bake him carrot cake whenever I am around him. :)


I finally know the way to divide cakes properly without much effort. Use an ICE CREAM scoop azreena. duhhh.



Nothing fancy...just a simple cake for myself. In between layers, I put some cream cheese frosting. YUM!

this recipe was taken from all recipes website and below is the recipe.

Hummingbird Cake recipe

INGREDIENTS:
3 cups all-purpose flour
2 cups white sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 cups vegetable oil
3 eggs
1 (8 ounce) can crushed pineapple with
juice
2 cups diced bananas
1 cup chopped pecans
1 teaspoon vanilla extract


DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 12 cup Bundt pan.
2. Measure flour, sugar, soda, salt, cinnamon, oil, eggs, vanilla into mixing bowl. Beat until smooth. Stir in pineapple with juice, bananas, and pecans. Pour into prepared pan.
3. Bake in oven for about 70 minutes. Turn cake out onto rack or plate after cooling for 20 minutes. Cool, and ice with cream cheese icing.

Aiman's Cupcake School Party


Time flies so fast. It is almost year end and my son managed to survive his school days. I almost couldn't believe my eyes how fast he has grown. I still remember his first day in nursery and how worried I was leaving him there. Alhamdulillah I think I have choosen the right nursery for him. Once you become a mother, your worries will never end especially thinking about your children.

I still remember how someone that I used to know doesn't get the idea how valuable time is for me. I am the type of person that doesn't like to sit still. Wasting time is hardly in my dictionary unless I am on a vacation. hihi.  Well...I don't know why I am writing about her but I am so hurt that this person doesn't appreciate things that I used to share with her. The worst part I become the bad person all together and for me she has won by showing to people how she has succeeded in her life with money. She won't read this blog...and I am sure she couldn't be bothered. Oh well.....life goes on people said and try not to hold grudges. 

I wish her well. Yes I miss her. 


Looking at my son today, I realised I too have changed. Most of the time I know what I want and growing this business alone is not an easy task. I most probably will be hiring people to help me baking. If any of you interested to work with me, kindly let me know. :)

Chocolate Cuppies


These are moist chocolate cupcakes with buttercream frosting. Everybody have their own favourite chocolate cake recipes and I have mine too. I like recipes that uses oil  but I most of the time using butter is more tastier. Oil will make your cakes moist  for days but butter is as good as well. Just make sure you don't over bake your cakes if using butter.

Raisins Scones Recipe


Scones are made to be eaten one or two but in my case...I could eat more than 4 at one go. Hihi. 
This is my favourite scone recipe and I hope you will give it a try. The most important thing when it comes to scones is to buy the best butter and don't over work the batter or else it will come a tough scones. Mine is tender and buttery. YUM!

Cranberry Scones Recipe

INGREDIENTS:

  • 2 cups sifted all-purpose flour (256gm)
  • 1/4 cup (60 gm) white sugar
  • 2 ½ tsp (12ml) baking powder
  • 1/2 tsp (3ml) baking soda)
  • 1/2 tsp salt (3ml)
  • 1/4 cup (65 gm) margarine or butter (good quality ones)
  • 3/4 cup (200 gm) dried cranberries ( I change it to raisins)
  • grated zest of half an orange (sometime I don't add it bcoz I don't have any)
  • 1 cup (250 ml) milk
  • METHOD:
    Preheat oven to 425°F or 220°C.
    Grease baking tray with margarine.
    Sift the flour, sugar, baking powder, baking soda and salt together.
    Cut in the margarine or butter till mixture resembles fine breadcrumbs, then stir in the cranberries and orange zest.
    Add the milk and mix to make a smooth dough.
    (add more milk if necessary to ensure mix is not too dry)
    Knead very lightly for ten seconds on a lightly floured surface.
    Roll or pat to about 3/4" thick (2 cm) and either cut into individual scones or cut into wedges, leaving intact (pizza style) to make a loaf.
    Baking time approximately 12 minutes for individual scones, 15-20 minutes for loaf-style.
    Brush tops with melted butter after removing from the oven.

    Soft Chocolate Chip Cookie

    Last week I decided to try this recipe with my friend. She stayed far from me and we both decided to try out this recipe together and discuss via online. (thanks to the technology nowadays, I feel that I connect with her as if she is with me 24/7)

    Anyways..this cookie batter look so yummy isn't it? I added two different types of chocolate chip. One is semi sweet and another one is coffee chocolate chips. Instead of 2 cups of chocolate chip...I added 4 cups to this batter.

    I love the result but I will bake it a shorter period the next time around. 


    It is so good. You can have it with  or without a glass of  milk. 


    Mind you that you will get almost 60 pieces from this recipe. Depending on the size of you cookie.

    Chewy Jumbo Chocolate Chip Cookies
    Adapted from inside the Land O Lakes Butter package
    Makes 26 jumbo cookies
    INGREDIENTS:
    4 1/4 cups all-purpose flour
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 1/2 cups unsalted butter
    1 1/4 cups sugar ( you can cut down sugar to 1 cup )
    1 1/4 cups firmly packed brown sugar
    2 eggs
    1 tablespoon vanilla
    1 (12-ounce) package (2 cups) semi-sweet chocolate chunks or chocolate chips ( I added 3 to 4 cups. hihi)
    DIRECTIONS:
    Heat oven to 375°F.
    Combine flour, baking powder and baking soda in a medium bowl. Set aside.
    Combine butter, sugar and brown sugar in a large bowl. Beat at medium speed, scraping the bowl often, until creamy. Add eggs and vanilla. Continue beating, scraping bowl often, until well mixed. Reduce speed to low. Beat, gradually adding flour mixture, until well mixed. Stir in chocolate chunks.
    Drop dough by 1/4 cupfuls, 2 inches apart, onto ungreased cookie sheets (tip: line the sheets with parchment, if you have some). Bake for 10 to 14 minutes or until light golden brown. (Do not overbake.) Let stand 1 to 2 minutes. Remove from cookie sheets.
    (I think 10 minutes is just nice if you want a soft cookie). :) Give it a try.

    Carrot cake for Deepavali

    Assalam friends, I wanted to upload this posting days ago but caught up with many things. Anyway...before that ...I would like yo wish my hindu friends, happy deepavali and for my muslim friends...selamat menyambut awal muharam .

    It is almost at the end of the year and mind you Im sure everybody has started planning for holidays. As for my family....we would love to go many places but I can see that my husband loves to plan at the very last minute.

    If you happen to wanting me to bake birthday cakes or any dessert for you ....please let me know in advance so that I can block my day for baking. Do enjoy your holidays ok...and hope next year will be a better year for all of us. cheers!
